
After years of making my own bread by hand and perfecting my recipe I am making the leap into the micro bakery business This is all part of our self sustaining lifestyle and to introduce good healthy bread into our mix of foodstuffs to sell in the shop when it opens
We are the proud owners of a professional dough mixer (it weighs in at 100kilos) and I have remanufactured a seriously heavy table that we inherited from a bookies shop years ago curtesy of Scottish Joe a friend of ours , I secured the legs by upgrading and bolting it right thru the table with countersunk bolts and bonded a stainless steel sheet on the top.

After a lot of cleaning the project by end of day is done and I have just hand mixed a four loaf batch for cooking this evening We are going to test out a baking oven next Wednesday by taking over one of our bread dough mixtures and trying out the stone baking oven that we may eventually purchase.
The gods are smiling on us as we have had rain last night and a sprinkling during the day all very welcome we need to see the grazed fields start to pick up with fresh grass so I can cycle the cattle round the paddocks.
